Zaza's Perfect Harvest Squash and Apple Pie
4-5 rounds pizza dough (homemade or store bought)
2 ripe apples, cut into teeny tiny cubes (you can use any kind. I like honey crisp)
1 butternut squash, peeled and cut into teeny tiny cubes
4-5 slices cooked bacon
1 lb blue cheese, crumbled
chopped, fresh sage about 1 tbsp per pie
Extra Virgin Olive Oil for drizzling
Optional: pumpkin seeds or pecans
Preheat the oven to 425°F. Line a baking sheet with parchment paper. Place the cubes of butternut squash on the baking sheet and drizzle with about 2 tbsp of olive oil. Sprinkle with salt and freshly ground black pepper.
Place the sheet in the oven and roast for about 20 minutes, or until the squash is soft and slightly crispy. Remove from the oven and set aside.
Heat the oven to 500°F. If using a pizza stone, allow the stone to heat up along with the oven for a half hour before baking on it.
Prepare the bacon:
Line a microwave safe plate with paper towels. Place 4-5 sliced of bacon on the towels, leaving space between each slice. Microwave on high for 1-2 minutes, until the bacon is cooked but not too crispy (it will cook again the oven).
Allow to cool and slice into small pieces. Set aside.
Stretch out your dough on a flour-dusted peel to about 8-10” in diameter. Distribute the squash and apples evenly on the top of the dough.
Scatter the blue cheese on top of the fruit and vegetables.
Next, add pieces of bacon.
Now drizzle a bit of Extra Virgin Olive Oil, and season with just a pinch salt.
Apply the fresh sage and if you’re using pumpkin seeds or pecans, scatter those across the top of the pizza as well.
Slide your pizza onto the stone in the oven and bake for 8-10minutes. Remove from the oven and enjoy!
