Zaza's Perfect Pear & Pecorino Pie

Makes 4-5 personal sized pizzas (8-10″ inches)
1 recipe pizza dough
2-3 ripe pears, sliced thinly (you can use any kind. I like bosc)
1 lb aged Pecorino cheese, shaved or grated
a drizzle of maple syrup (I got mine from Vermont) per pie
chopped, fresh Rosemary (as much as you’d like)
Extra Virgin Olive Oil for drizzling
Sea salt – just the tiniest pinch per pie, as Pecorino is a salty cheese
Heat the oven to 500 degrees. If using a pizza stone, allow the stone to heat up along with the oven for a half hour before baking on it.
Stretch out your dough on a flour-dusted peel to about 8-10-” in diameter. Distribute the sliced pears evenly on the top of the dough.
Scatter the Pecorino cheese on top of the pears.
Drizzle with maple syrup. Don’t overload it, just the thinnest ribbon of syrup. I actually use a ketchup squeezy bottle so I can control the amount.
Now drizzle a bit of Extra Virgin Olive Oil, and season with just a pinch salt.
Apply as much fresh rosemary as you’d like.
Slide your pizza onto the stone in the oven and bake for 8-10minutes. Remove from the oven and enjoy! Now make one for someone else.
